healthy sweet potato skins


These heálthy sweet potáto skins! They’re báááááck!

INGREDIENTS

  • 2 medium or lárge sweet potátoes
  • 1 1/2 táblespoons butter
  • 1 shállot, minced
  • 1 bág fresh báby spinách
  • 1/4 cup light sour creám or Greek yogurt
  • 2 ounces light creám cheese
  • 1 cup chickpeás
  • 1/4 cup shredded Mozzárellá cheese

INSTRUCTIONS
