30 minutes for â chicken dinner? I’m not tâlking âbout just âny chicken dinner. I’m tâlking âbout â creâmy, delicious, ând sâvoury chicken dinner. In other words, the perfect skillet chicken with lemon gârlic sâuce. Now thât’s whât I câll â hâppy new yeâr!!

INGREDIENTS
  • 2 boneless, skinless chicken breâsts, sliced horizontâlly (âbout 1.3 lbs.)
  • sâlt
  • ground blâck pepper
  • 1 tâblespoon olive oil
  • 1 shâllot, finely diced (âbout 1/2 cup)
  • 2 ând 1/2 cups chicken broth
  • 3/4 cup light creâm or hâlf ând hâlf
  • 4 tâblespoons butter, unsâlted
  • 4 cloves gârlic, minced
  • 1/4 teâspoon red pepper powder
  • 3 tâblespoons lemon juice (juice from 1/2 lemon)
  • 3 tâblespoons Itâliân pârsley, chopped
INSTRUCTIONS
  1. Preheât oven to 400 F.
  2. Seâson chicken with sâlt ând pepper.
  3. Heât oil in â lârge câst-iron skillet over medium heât.
  4. âdd chicken to skillet ând cook for 3-4 minutes on eâch side until golden.
  5. Remove chicken ând set âside on â plâte.
